Role Overview
The Assistant Cost Controller plays a key role in FITTMEALS cost control function, providing dedicated, day-to-day oversight of cost-related activities across kitchen and production operations serving both our D2C and B2B channels. This role is central to protecting financial performance at the production level — ensuring daily flash reporting, recipe-to-actual cost variance tracking, and consumption monitoring are consistently and accurately carried out.
This is a hands-on, floor-based role that requires close coordination with kitchen and production teams. Working hours are primarily during the day, with periodic coverage of night production runs to maintain full cost visibility around the clock.
Key Responsibilities
- Prepare daily flash reports comparing actual material usage against standard recipe costs, highlighting variances for immediate review.
- Support cost oversight during night shift operations by monitoring material consumption in real time and flagging variances as they occur.
- Conduct yield checks, portion control monitoring, and wastage tracking across kitchen and production lines.
- Coordinate with production and kitchen teams to ensure accurate, timely capture and reporting of consumption data which includes Material transfers D2C, B2B, Staff meals etc.
- Monitor and control recipes at the ingredient level, identifying and escalating ingredient substitutions or changes in real time.
- Validate and update recipe costs based on actual raw material costs, ensuring standard costs remain aligned with current pricing.
- Support month-end cost analysis, reconciliation, and reporting activities in collaboration with the Finance and Procurement teams.
- Investigate significant cost variances and material discrepancies, working with kitchen leads to identify root causes and corrective actions.
- Maintain accurate, organized records of consumption data, recipe costings, and variance reports to support audit and review processes.
- Escalate recurring or material cost leakages to the Procurement Lead with supporting data.
Skills & Competencies
- Strong attention to detail and accuracy in data capture, calculation, and reporting.
- Working proficiency in Excel (formulas, pivot tables) and familiarity with ERP, inventory, or recipe-costing systems.
- Solid understanding of food costing principles, yield management, and portion control.
- Clear, professional communication skills for coordinating with kitchen, production, procurement, and finance teams.
- Ability to work independently, manage time-sensitive daily reporting deadlines, and prioritize under operational pressure.
- Analytical mindset with the ability to identify trends, variances, and root causes in cost data.
- High level of integrity and discretion when handling cost and pricing information.

- Consistency and timeliness of daily flash report submission.
- Accuracy and timeliness of variance identification between actual consumption and recipe standards.
- Reduction in unexplained material variances and wastage over time.
- Completeness of night shift consumption monitoring and reporting.

Qualifications
- Bachelor's degree in Accounting, Finance, Business Administration, Culinary Management, or a related field; equivalent practical experience will be considered.
- 2–4 years of experience in cost control, food costing, ideally within food and beverage, catering, or meal production environments.
Other Requirements
- Demonstrated experience working with recipe costing, standard vs. actual cost analysis, and inventory/consumption tracking.
- Comfortable working on the production floor and in kitchen environments, including periodic night shift coverage.
