About Wynn Al Marjan Island:

On schedule to open in the United Arab Emirates in Spring 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.

About The Position

Wynn Al Marjan Island is currently seeking an Assistant Stewarding Manager to join the resort's Wynn Oasis team.

Responsibilities

The primary duties and responsibilities of this role are:

  • Assist and support the Stewarding Manager in planning and overseeing kitchen cleanliness and sanitation activities.
  • Schedule and conduct daily kitchen inspections to ensure compliance with health and fire department regulations.
  • Arrange and supervise the maintenance of all banquet equipment, both stationary and portable.
  • Maintain inventory control and procure equipment and supplies to support the Catering and Culinary Departments within budget.
  • Assist outlet operations with setup and teardown.
  • Handle administrative duties and staff scheduling.
  • Perform duties assigned by the Stewarding Manager and assume responsibilities in their absence.
  • Support banquet plate-ups, transport and stock items, assist chefs and kitchen staff with various tasks, and coordinate with other departments to ensure service needs are met.
  • Schedule rosters and align manpower with business demands.
  • Provide supervision, direction, and leadership to Stewards to achieve departmental goals.
  • Organize training sessions and refresher courses in coordination with the Department Trainer.
  • Promote a work environment where employees feel valued, appreciated, involved, equal, and safe.
  • Interact professionally and positively with department and company team members, management, and contractors.
  • Adhere to company policies and procedures and comply with the Code of Conduct.
  • Participate in the company recycling program and maintain strict discipline to reduce, reuse, and recycle wherever possible.
  • Assist in analyzing and controlling costs related to cleaning supplies, equipment breakage, and silverware loss, and implement measures to reduce waste.
  • Demonstrate familiarity with health, safety, food sanitation, and HACCP standards.
  • Responsibilities include conducting risk assessments, monitoring risk levels, ensuring regulatory compliance, and reporting findings to senior management.
  • Any other duty as assigned.

About You

The ideal candidate for this position will have the following experience and qualifications:

  • The minimum educational qualification required is completion of secondary school; higher academic credentials are considered an asset.
  • Due to gaming operations and associated regulatory requirements, the minimum age for employment is 21 years.
  • Minimum of 5 years of experience in a leadership role within the 5-star hotel industry or integrated resort, of which at least 2 years must be in stewarding operations across multi-outlet or chain food and beverage environments.
  • Knowledge of the correct use, handling, and storage of cleaning chemicals.
  • Proficiency in MS Office and hotel operating systems.
  • HACCP certification is an advantage.
  • ServeSafe certification is an advantage.
  • Basic food safety knowledge is compulsory.
  • Strong communication and organizational skills.
  • Positive attitude and strong work ethic.
  • Physically fit and capable of cleaning high areas, handling large equipment, and heavy lifting.
  • Good interpersonal skills.
  • Team player who responds quickly to demands and thrives in a high-pressure work environment.
  • Flexible with work schedules and able to work in shifts based on business needs.
  • Fluency in English is essential; proficiency in additional languages is considered an asset.
  • Experience with payroll systems such as Time Manager or equivalent.
