We need to enhance the taste experience for our guests and offer the most exciting menu options while maintaining efficient and well-structured internal processes in supply and production.
We're looking for a Brand Chef/R&D-manager with procurement expertise.
This role combines the skills of a food technologist and researcher - someone who understands taste and food, dough and QSR production, logistics, commercial matters, the consumer market, and procurement - all driven by a spirit of entrepreneurship and innovation.
*Vacancy suggests a hybrid format with direct accommodation in Dubai.
Required skills:
- Degree in food production or a related field;
- At least 4 years of experience in the restaurant industry;
- Dough and pizza experience (min role R&D/NPD manager is required)
- Understanding of how the foodservice market operates;
- Strong communication skills, including conducting negotiations with partners and suppliers;
- Experience in menu development, including the creation of technical and technological cards (recipes/spec sheets), unit cost calculation, food pairing, and analysis of food consumption trends across different markets;
- English proficiency at Upper-Intermediate level or higher;
- Previous experience as a Brand Chef in an international food company or R&D manager at a similar company.
Day-to-day tasks:
- Create and develop new products, including pizza, sides, snacks, desserts and beverages, as well as compound ingredients for the whole region;
- Launch new countries in MENA region with all Dodo Pizza process and standards;
- Support all already opened countries in the MENA region with business trips;
- Collaborate with suppliers provide technical specifications, drive improvements and organize innovation days;
- Prepare and conduct culinary presentations;
- Systematically check customer experience and work with feedback on ingredients from both - customers and franchise partners;
- Organize cross-functional work with purchasing, logistics, marketing teams and pizza makers - improve processes, share expertise.
