JOB SCOPE
Assist in all aspects of kitchen operations, including food cost control and maintaining high-quality food delivery. Ensure that all dishes meet the required standards for taste, presentation, and guest satisfaction. Support daily kitchen operations, assist with food preparation, maintain freshness and quality, and oversee ordering, delivery checks, and stock control. Provide scheduling support when required. independently managing an assigned kitchen shift.
JOB RESPONSIBILITIES
- Supervise and execute food production according to guidelines from Sous Chef.
- Ensure all dishes meet prescribed standards for food quality, portioning, presentation, and taste.
- Maintain strict adherence to hygiene, sanitation, cleanliness, and safety standards in assigned areas.
- Check and ensure availability and quality of ingredients; coordinate with Purchase for stock and raw material requirements.
- Assist in planning rosters for Commis based on operational needs and busy periods.
- Support food promotions, festivals, and unit- or company-wide culinary activities.
- Use resources efficiently to maintain food costs within budget.
- Resolve operational issues promptly and support smooth kitchen operations.
- Prepare Middle Eastern and International dishes.
- Maintain quality, presentation and portion control.
- Monitor FIFO, stock and buffet replenishment.
- Follow best practices in fire prevention, hazard handling, first aid, kitchen safety, and security.
- Conduct inspections and spot checks to ensure compliance with health, safety, and hygiene standards
- Submit daily operational reports via the CPR system (maximum one missed report per month).
JOB REQUIREMENTS
- Minimum 5 years of relevant experience, preferably in hotel, catering, or high-volume culinary
- Minimum 3 years of Middle East experience.
- Knowledge of Arabic cuisine.
- Flexible across company locations.
Additional Requirements:
- Willing to work rotating shifts, weekends and public holidays in a 24/7 airport environment.
- Flexible to be deployed to any Plaza Premium Group operation within the UAE or internationally based on business requirements.
- Demonstrates professionalism, teamwork and commitment to premium guest service.
