ABOUT THE ROLE

The role holder is to lead and oversee all pastry and dessert operations, ensuring the creation of high-quality, innovative, and visually appealing baked goods that meet the luxury standards of the establishment. This role involves menu development, managing the pastry team, maintaining inventory and cost control, and delivering exceptional guest experiences through consistent product excellence and creativity.

CORE RESPONSIBILITIES

  • Develop and design innovative pastry and dessert menus that align with the hotel's luxury standards.
  • Oversee daily pastry kitchen operations to ensure quality, consistency, and presentation.
  • Manage, train, and motivate the pastry team to maintain high performance and professionalism.
  • Monitor inventory levels, control costs, and liaise with suppliers for quality ingredients.
  • Ensure compliance with food safety, hygiene, and sanitation standards.
  • Collaborate with the broader culinary and F&B teams to enhance guest dining experiences.

PEOPLE MANAGEMENT RESPONSIBILITIES

  • Recruit, train, and develop pastry team members to uphold high culinary standards.
  • Assign daily tasks and manage staff schedules to ensure efficient kitchen operations.
  • Provide leadership, motivation, and constructive feedback to encourage team growth.
  • Conduct regular training on pastry techniques, food safety, and hygiene practices.
  • Address and resolve any staff conflicts or performance issues professionally.
  • Foster a positive, collaborative, and disciplined work environment within the pastry team.

WHAT YOU WILL NEED TO SUCCEED

  • Minimum 810 years of professional pastry experience.
  • At least 35 years in a leadership role within a 4- or 5-star hotel, fine dining, or luxury patisserie environment.
  • Extensive hands-on experience in classical and modern pastry techniques, chocolate, sugar art, bakery, and plated desserts.
  • Proven ability to manage large pastry production operations for la carte, buffets, and banquets.
  • Experience with menu engineering, cost control, and team leadership in high-volume or luxury settings
  • Strong aesthetic sense, creativity, and a passion for innovation in the pastry arts.
  • Experience working with international teams and exposure to global dessert trends.
