Job Summary:
The Cost Control Manager is responsible for overseeing all cost-related accounting operations within food and beverage outlets, ensuring accurate financial reporting, effective cost control systems, and compliance with international accounting standards. The role supports profitability through detailed analysis, budgeting, and close collaboration with operational teams.
Key Responsibilities:
- Liaise closely with Food & Beverage teams on operational and cost-related matters.
- Prepare recipe and menu costing in coordination with the Executive Chef and recommend appropriate selling prices.
- Conduct test checks on goods receiving to ensure compliance with established procedures.
- Perform random inventory counts in stores and outlets to validate stock accuracy.
- Prepare daily flash reports highlighting food cost performance.
- Attend major banqueting events, including open-bar functions, to monitor cost control.
- Prepare Profit & Loss statements and revenue breakdown summaries for major events.
- Verify outlet void control sheets and open-item pricing reports, ensuring correct POS configuration.
- Reconcile outlet inventories by analyzing opening stock, closing stock, issues, and sales.
- Review, verify, and approve food and beverage requisitions, including special event requests.
- Transfer POS (Micros) revenue data and generate potential usage and variance reports.
- Prepare costing for imported invoices and record free-of-charge beverage receipts.
- Review spoilage reports and prepare weekly general store issue reports.
Qualifications:
- Bachelor's degree in Finance, Accounting, Economics, MBA, or a related field.
- 610+ years of relevant experience in cost control within the Food & Beverage industry.
- Strong background in luxury hotels or large F&B groups (e.g., international hotel chains or multi-brand restaurant groups).
- Strong analytical and critical thinking abilities.
- High attention to detail and accuracy.
