Role Overview
The Demi Chef de Partie supports the Chef de Partie in preparing, cooking, and presenting meals according to standards. This role ensures food quality, consistency, and timely production for catering and daily meal plan operations. The DCDP is responsible for overseeing a workstation, guiding junior staff, and maintaining excellent hygiene, organization, and workflow within their section.
Responsibilities
- Prepare, cook, and plate dishes according to recipes, portion sizes, and nutritional guidelines.
- Assist in managing a workstation, ensuring all required ingredients, tools, and equipment are ready before production.
- Supervise and guide Commis staff, ensuring they follow proper food preparation, hygiene, and safety practices.
- Maintain food quality by consistently checking taste, appearance, freshness, and adherence to company standards.
- Ensure proper storage and labeling of ingredients, following FIFO and food safety rules.
- Support daily production targets and ensure workflow is smooth, efficient, and completed within scheduled timelines.
- Monitor equipment and tools, reporting any faults or maintenance needs to the Chef de Partie or Sous Chef.
- Follow all HACCP and Dubai Municipality requirements, ensuring full compliance at all stages of food handling.
- Assist in receiving and checking deliveries, ensuring accuracy and quality before storage.
- Reduce food waste through precise portion control, correct preparation techniques, and efficient station management.
Minimum Qualifications
- Minimum 23 years of experience in a professional kitchen, preferably in catering, meal prep, or high-volume production.
- Previous experience as a Commis or Demi CDP required.
- Strong understanding of basic and intermediate cooking techniques.
Preferred Qualifications
- Excellent knowledge of food preparation, cooking, and presentation.
- Ability to supervise and train junior kitchen staff.
- Strong planning, organization, and time management skills.
- Ability to maintain composure and efficiency in a fast-paced environment.
