Key Responsibilities
- Take full ownership of the kitchen, developing seasonal menus that honour Japanese culinary tradition while bringing creativity and flair to the concept.
- Set and uphold the highest standards of quality, consistency, and presentation across every dish and every service.
- Lead, mentor, and inspire the kitchen brigade, building a strong team culture and developing talent at every level.
- Take charge of purchasing, stock control, and supplier relationships, ensuring exceptional produce while keeping waste to a minimum.
- Own the kitchen's financial performance, managing food costs and driving efficiencies without ever compromising the guest experience.
- Champion food safety and hygiene standards, keeping the kitchen audit-ready at all times.
About You
- Proven experience in Izakaya and Omakase concepts.
- A background in luxury hospitality and high-end dining environments, ideally within luxury hotels.
- Formal culinary training from an accredited culinary school, with a completed apprenticeship and chef training.
- Strong leadership and people management skills, with the ability to lead a fast-paced restaurant operation.
- A natural collaborator who builds strong relationships with stakeholders across the operation.
