About the Role

The Head Pizzaiolo is responsible for updating Brand Executive Chef about the daily kitchen activities and Kitchen team and ensuring the preparation and presentation of pizzas is in line with company standards and brand requirements. His main goal will be helping increase customer satisfaction by preparing high-quality pizzas.

Responsibilities

  • Carry out instructions received by the Brand Executive Chef.
  • Assists Brand Executive Chef in inspecting all pizza are consistently prepared and served according to the restaurant's recipes, portioning, cooking, and serving standards.
  • Inspects products quality during and after preparation, and adjusts as required.
  • Understand about organic flour and dough, slow fermentation and maturing.
  • Help build, train and lead the future pizzaiolo team (and shifts) in a positive and proactive manner to build the team and culture ready and rearing for our future growth, impact and challenges together.
  • Meets customer requirements in terms of special requests and dietary needs.
  • Collaborates with Brand Executive Chef to create specials for the pizza menu.
  • Collaborates with Brand Executive Chef regarding special requirements, VIPs, functions, etc.
  • Ensures the proper appearance (condition of uniforms) and grooming of all kitchen staff.
  • Monitors daily attendance of your section.
  • Constantly develop skills and knowledge.
  • Suggest recipes to renew the menu and draw in more clients.
  • Check all the kitchen equipment and tools before utilizing and maintain a cooking station neat and clean.

Qualifications

  • Degree in Culinary Arts or a related field.
  • Minimum 5 years of experience in kitchen, at least 1 year as Junior Sous Chef.

Required Skills

  • Good understanding of Italian Cuisine.
  • Good English.
  • Knowledge of Food Safety, HACCP, Sanitation, and Personal Hygiene basics.
  • Ability to maintain high quality control standards.
  • Knowledge of supplies, equipment, and/or services ordering and inventory control.
  • Knowledge of maintenance and care of culinary facilities, equipment, supplies, and materials.
  • Ability to supervise and direct cooks.
  • Handles multiple priorities and ability to work under pressure and take initiative in a fast-paced environment.
  • Highly cooperative team spirit.
  • Positive attitude and a willingness to learn.
  • Must have problem solving abilities, be self-motivated, and organized.
