Night Steward

Job Summary

The Night Steward supports the overnight operation of the Stewarding Department by ensuring the highest standards of cleanliness, sanitation, hygiene, and operational readiness are consistently maintained in line with Rosewood brand standards and the expectations of an ultra-luxury environment. Working across kitchens, restaurants, bars, meetings & events, and back-of-house areas, the Night Steward performs scheduled deep cleaning, equipment maintenance, and overnight stewarding duties to ensure all operational areas are fully prepared for the following day's service.

Working closely with the Stewarding Team Leader, Stewarding Manager, Culinary, Food & Beverage, Engineering, and other departments, the Night Steward ensures food safety standards are maintained while contributing to a safe, organized, and efficient overnight operation.

Essential Duties and Responsibilities

Quality:

• Maintain stewarding operations in line with Rosewood brand standards, Forbes standards, LQA requirements, HACCP, and local health regulations. 
• Perform overnight deep cleaning of kitchens, restaurants, bars, meetings & events areas, and all back-of-house facilities according to departmental schedules. 
• Clean, sanitize, and polish crockery, cutlery, glassware, cookware, kitchen utensils, and operating equipment according to hotel standards. 
• Operate dishwashing equipment safely and efficiently to ensure all operating equipment is clean and ready for the following day's operation. 
• Ensure all kitchen equipment, preparation areas, floors, walls, drains, extraction systems, storage areas, and food contact surfaces are thoroughly cleaned and sanitized. 
• Complete scheduled deep cleaning tasks assigned by the Stewarding Manager or Stewarding Team Leader. 
• Ensure all operating equipment is stored correctly and maintained in excellent condition. 
• Remove waste, recycling, grease, and refuse in accordance with hotel procedures and environmental standards. 
• Report damaged equipment, maintenance issues, hygiene concerns, or pest activity immediately. 
• Ensure all stewarding areas are clean, organized, and operationally ready before the morning shift begins. 
• Support overnight operational requirements and emergency cleaning requests as required. 
• Follow instructions provided by the Stewarding Team Leader and Stewarding Manager to ensure smooth overnight operations.

Financial:

• Handle operating equipment carefully to minimize breakage and unnecessary loss. 
• Use cleaning chemicals responsibly and according to manufacturer and hotel guidelines. 
• Report damaged or missing operating equipment promptly. 
• Support inventory counts of operating equipment and stewarding supplies when required. 
• Ensure responsible use of departmental resources and equipment. 
• Contribute to cost control by maintaining proper care of all hotel assets. 
• Minimize waste through efficient cleaning practices and proper chemical usage.

Leading:

• Support the Stewarding Team Leader and Stewarding Manager in achieving overnight operational objectives. 
• Work collaboratively with Culinary, Food & Beverage, Engineering, Housekeeping, Security, and other hotel departments during overnight operations. 
• Maintain professional grooming, appearance, and behavior at all times. 
• Demonstrate a positive attitude and willingness to support operational requirements. 
• Participate in departmental training and continuously develop operational knowledge and skills. 
• Follow instructions and complete assigned duties efficiently, accurately, and within established timeframes. 
• Communicate operational concerns promptly to supervisors. 
• Maintain teamwork and cooperation with fellow associates. 
• Demonstrate flexibility by supporting different operational areas based on business requirements.

• Follow safe working practices across all areas of the outlet.
• Ensure compliance with Health and Safety regulations and hotel procedures.
• Report hazards, defects, and safety concerns immediately.
• Ensure incidents and accidents are reported in line with procedures.
• Maintain compliance with HACCP and food safety standards.
• Promote a safe environment for guests and associates
