Quality Assurance & Food Safety Manager plays a vital role in protecting these standards across all our regionsupholding the integrity of our food safety systems, strengthening compliance, and ensuring our teams are empowered to deliver excellence every day.
Based in our Dubai Head Office, this role works closely with Operations, Culinary, Procurement, Training, Beverage and Maintenance teams, as well as external partners and regulatory bodies. Together, you will help shape a culture where food safety is understood, respected, and seamlessly embedded into every touchpoint of our guest experience.
The ideal candidate brings strong technical knowledge, sound judgement, and a handson, collaborative approach paired with a genuine passion for nurturing high-performing, safety-conscious teams across the group.
Your Mission
You will be the guardian of our food safety philosophy ensuring that every restaurant operates with integrity, accuracy and care. From maintaining HACCP compliance to guiding teams through best-in-class standards, your work will safeguard the trust our guests place in us.
Your leadership will ensure that our documentation, processes, and training are not only compliant, but intuitive, practical and aligned with our values of excellence, generosity and collaboration.
Key Responsibilities
HACCP Compliance & Oversight
- Ensure all restaurants across multiple regions maintain full compliance with HACCP requirements and company food safety standards.
- Conduct regular internal audits, inspections, and compliance checks to verify adherence to HACCP protocols.
- Identify non-conformities and implement corrective and preventive actions (CAPA) in collaboration with Operations and Training teams.
- Monitor critical control points (CCPs) and ensure all documentation is accurate, complete, and consistently maintained.
HACCP Manuals, Policies & Procedures
- Review, update, and refine HACCP manuals, SOPs, policies, and procedures to reflect operational realities, regulatory changes, and best practices.
- Ensure all documentation remains relevant, practical, and aligned with the company's operational model.
- Develop and roll out new or revised procedures as needed, ensuring clarity and ease of implementation for restaurant teams.
- Collaborate with Training to integrate updated food safety content into onboarding and ongoing learning modules.
Audit Preparation & Accreditation Management
- Serve as the primary liaison with the company's appointed HACCP accreditation authority.
- Plan, coordinate, and facilitate annual surveillance audits across all locations.
- Ensure each restaurant is fully prepared for audits through pre-audit assessments, coaching, and documentation reviews.
- Lead the follow-up process post-audit, ensuring timely closure of any findings and continuous improvement of systems.
Food Watch Training Centre Management
- Manage the company's Training Centre profile and activities on the Dubai Food Watch (DFW) network.
- Ensure all training programs, trainer registrations, and compliance requirements are up to date and aligned with Dubai Municipality standards.
- Maintain accurate records, approvals, and certifications within the DFW system.
- Coordinate with internal teams to ensure all food handlers complete required DFW-linked training and renewals.
Cross-Functional Collaboration
- Work closely with Operations to embed food safety practices into daily routines and guest-facing standards.
- Partner with Procurement to ensure suppliers meet food safety requirements and support traceability.
- Support New Store Openings (NSOs) by ensuring food safety systems are implemented from day one.
- Provide expert guidance to franchisees and internal teams on food safety expectations and compliance.
Training, Coaching & Culture Building
- Deliver targeted training sessions on HACCP, hygiene, and food safety best practices.
- Coach restaurant leaders to build a culture of proactive food safety awareness and accountability.
- Support the development of practical tools, checklists, and guides that make compliance easy and consistent.
Regulatory & Industry Compliance
- Stay updated on G.C.C. food safety regulations, municipal requirements, and industry trends.
- Ensure all restaurants meet or exceed local regulatory standards in each operating region.
- Maintain strong relationships with regulatory bodies and external auditors.

Experience & Skills
- Bachelor's degree in Food Science, Microbiology, Public Health, or related field.
- HACCP Level 4 certification required; Lead Auditor certification preferred.
- Minimum 57 years of experience in food safety or quality assurance within the hospitality or F&B sector.
- Experience managing multi-site operations across different regions is highly advantageous.
- Strong knowledge of G.C.C. food safety regulations, HACCP accreditation processes, and Dubai Food Watch systems.
- Excellent communication, training, and stakeholder management skills.
- Detail-oriented, analytical, and able to work independently across diverse environments.
