Job Description

Purpose of the role:

The Quality Control Chef is responsible for ensuring consistent food quality, safety, and compliance across all brands produced in the central kitchen, including meal plans, restaurants, Fuel Up, and other in-house brands, in line with U.A.E Food Safety Regulations, HACCP, and ISO 22000 standards. S/he is fully responsible for all food taste, overall quality consistency, and for managing, investigating, resolving, and preventing all taste and quality-related complaints across all brands.

Key Areas of Responsibilities:

  1. 1. Quality Control & Brand Compliance

  • Conduct batch-wise tasting and visual inspections before packing and dispatching.
  • Ensure adherence to approved recipes, portion sizes, yield standards, and brand specifications.
  • Approve or reject finished products based on quality benchmarks.
  • Ensure correct packaging, labeling, and brand segregation.

  1. 2. Production Monitoring

  • Monitor daily production activities in hot kitchen, cold kitchen, butchery, and packing areas.
  • Ensure SOPs are followed at all stages of food production.
  • Verify correct cooking, cooling, blast chilling, storage, and reheating procedures.

  1. 3. Food Safety & Regulatory Compliance

Ensure compliance with Dubai Municipality / Abu Dhabi Food Safety Regulations.

Monitor hygiene practices, temperature controls, FIFO, allergen control, and cross- contamination prevention.

Ensure staff compliance with personal hygiene and uniform standards.

  1. 4. Receiving & Raw Material Control

Inspect incoming raw materials for quality, freshness, temperature, and specification compliance.

Coordinate with stores and procurement to reject non-conforming items.

Ensure proper storage, segregation, and traceability of ingredients.

  1. 5. Training & Staff Support

Conduct food safety, hygiene, SOP, and quality standards training.

Provide corrective feedback and on-the-job guidance to production teams.

Support menu trials, new product development, and launches.

  1. 6. Documentation & Audits

Maintain daily quality checklists, tasting records, temperature logs, and rejection reports.

Support internal, external, and authority audits.

Implement and follow up on corrective and preventive actions (CAPA).

Professional Requirements:

  • Diploma/Equivalent in Culinary Arts, Food Technology, Hotel or Hospitality Management.
  • Strong understanding of ISO standards.
  • Minimum 45 years of experience in a central kitchen, catering, or multi-brand operations within UAE/GCC.
  • Knowledge of Dubai Municipality Food Code / Food Watch systems is an added advantage.

Interpersonal Requirements:

  • Strong sensory evaluation and food standardization skills.
  • Excellent knowledge of U.A.E food safety regulations.
  • Strong attention to detail and problem-solving skills.
  • Good communication and staff training abilities.
  • Ability to work under pressure in a high-volume environment.

Salary: AED 14,000.00 /month for first 6 months & 15,000 thereafter

Other Benefits: Medical + Annual airfare + Duty Meals
