The Quality Supervisor is responsible for overseeing the daily operations of the QA department. This role ensures that all raw materials, in-process production, and finished frozen goods meet stringent safety, sensory, and regulatory standards. You will lead a team of technicians to maintain compliance with HACCP, SQF/BRC, and SFDA regulations.
Key Responsibilities
1. Food Safety & Compliance
- HACCP & PCQI Oversight: Maintain and update Hazard Analysis and Critical Control Point (HACCP) plans specifically for freezing processes.
- Audit Readiness: Lead the facility through internal and third-party audits
- Regulatory Liaison: Ensure all labeling and nutritional information complies with current food law.
2. Cold Chain & Process Control
- Freezing Parameters: Monitor blast freezer temperatures and dwell times to ensure optimal ice crystal formation (maintaining product texture).
- Thermal Validation: Conduct regular validation of cooking/blanching temperatures and subsequent crust freeze or deep freeze stages.
- Microbiological Testing: Oversee environmental monitoring programs (Listeria/Salmonella swabs) and finished product testing.
3. Team Leadership
- Supervision: Manage a team of QA Technicians across multiple shifts, providing training on sensory evaluation and defect detection.
- CAPA Management: Lead Corrective and Preventive Action (CAPA) investigations when deviations occur in the freezing tunnel or storage.
4. Supplier & Inventory Quality
- Raw Material Inspection: Verify the quality of incoming ingredients (meat, vegetables, sauces) before they enter production.
- Shelf-Life Studies: Conduct thaw-back evaluations and sensory testing to ensure the product holds up over its 1224 month frozen lifespan.
Required Qualifications & Skills
Education
Bachelor's degree in Food Science, Microbiology, or Chemistry.
Experience
35 years in F&B Quality, with at least 1 year in a frozen environment.
Certifications
HACCP Certified (Required)
Technical Knowledge
Deep understanding of flash freezing (IQF) and cold storage logistics.
Soft Skills
Ability to make stop-line decisions under pressure and handle high-stress audits.
