Revenue & Reservations Manager
Reporting to: Managing Director
Role Objective
Own and optimize revenue performance across all venues by extracting the right data, translating it into pricing, reservation, and yield decisions, and continuously improving table utilization, covers, and spend per guest.
Key Duties & Responsibilities
1. Revenue Optimization & Yield Management
Maximize revenue per available seat hour (RevPASH) across all venues
Design and manage demand-based reservation strategies: time-slot optimization, table mix optimization (2-tops vs 4-tops vs large tables), and peak vs off-peak policies
Recommend pricing and packaging strategies: minimum spends (where applicable), set menus, tasting menus, group menus, and peak-day or peak-time pricing logic (where brand-appropriate)
2. Reservations Strategy & Channel Management
Own performance of all reservation channels: online booking platforms (e.g., SevenRooms, OpenTable, Resy, etc.), phone reservations, and walk-ins
Reduce no-shows and late cancellations via deposits / credit-card guarantees, smart reminder logic, and policy segmentation by day/time/party size
Optimize conversion rates from reservation inquiry seated guest
3. Data Extraction, Reporting & Insights
Build and maintain a weekly and monthly revenue dashboard, including: covers by daypart / venue, RevPASH, average spend per cover, table turn times, no-show & cancellation rates, and channel mix & conversion
Integrate data from POS systems, reservation platforms, and CRM / guest databases
Identify patterns and opportunities: under-utilized time slots, high-value guest segments, and seasonal / weather-related demand shifts
4. Forecasting & Planning
Produce weekly and monthly revenue forecasts by venue
Support staffing optimization (covers vs labor), event and group booking strategy, and special days (holidays, weekends, major events)
Build scenario models (what if) for changes to seating time limits, menus, or policies
5. Guest Segmentation & CRM Strategy
Segment guests by frequency, spend, booking behavior, and occasion (business, family, celebrations)
Work with marketing to target high-value guests during soft periods, drive repeat visits, and personalize offers without discounting brand value
6. Cross-Functional Collaboration
Work closely with General Managers, reservation teams, marketing, and finance
Translate insights into clear, actionable instructions for venue teams
Train front-of-house teams on revenue-aware seating decisions, reservation discipline, and policy enforcement without harming guest experience
Ideal Work Experience
Required
37 years experience in: restaurant revenue management, OR hotel revenue management with strong F&B; exposure, OR multi-site hospitality analytics / commercial role
Proven experience optimizing reservations, covers, and table utilization
Hands-on experience with POS systems, reservation platforms, and Excel / Google Sheets (advanced) Strongly Preferred
Experience managing multiple venues simultaneously
Background in premium casual dining, upscale dining, or high-volume concepts
Direct exposure to RevPASH calculations, reservation policy design, and guest demand forecasting
GCC / Middle East hospitality experience (strong plus)
Education & Technical Skills
Education
Bachelor's degree in Hospitality Management, Business Administration, Finance, Economics, or Data / Analytics
Master's degree or revenue certifications are a plus but not required if experience is strong
Technical Skills
Advanced Excel / Google Sheets (pivot tables, formulas, modeling)
Strong data interpretation skills (not just reporting)
Experience with POS analytics and reservation platforms (SevenRooms, OpenTable, Resy, etc.)
Ability to create simple dashboards (Excel, Google Data Studio, Power BI, or similar)
