The Role

As a Stewarding Manager, you will lead the stewarding department to ensure the highest standards of cleanliness, sanitation, and equipment maintenance in all kitchen, banquet, and dining areas. Manage stewarding teams, optimize resource efficiency, and ensure compliance with health, safety, and sustainability protocols.

Key Areas of Responsibilities

Please note that the responsibilities outlined below are not exhaustive. Red Sea Global Hospitality employees continuously innovate in caring for the needs of the business, their guests, and their colleagues. As a Stewarding Manager, you will need to:

1. Kitchen Sanitation & Safety Compliance

  • Ensure 100% compliance with local health department regulations and HACCP standards.
  • Oversee daily cleaning and sanitation of kitchen equipment, utensils, and workstations.
  • Train staff on hygiene protocols, chemical safety, and pest control measures.

2. Equipment Management & Maintenance

  • Supervise the maintenance, repair, and inventory of kitchen equipment (e.g., dishwashers, ovens, glassware).
  • Coordinate with maintenance teams to minimize equipment downtime.
  • Conduct monthly equipment audits to ensure functionality and safety.

3. Team Leadership & Training

  • Manage and schedule stewarding staff, including hiring, training, and performance reviews.
  • Foster a culture of efficiency and teamwork, addressing conflicts or performance gaps promptly.
  • Implement cross-training programs to prepare staff for high-volume events.

4. Inventory & Resource Control

  • Monitor usage of cleaning supplies, chemicals, and disposables to minimize waste and control costs.
  • Maintain accurate records of inventory levels and place orders with approved vendors.
  • Ensure proper storage of equipment and supplies to prevent damage or loss.

5. Banquet & Event Support

  • Coordinate with the Banquet and Culinary teams to ensure timely setup/breakdown of event spaces.
  • Deploy staff efficiently during large events to meet service standards.
  • Inspect banquet equipment (china, silverware, glassware) for cleanliness and readiness.

6. Waste Management & Sustainability

  • Implement recycling programs and ensure proper disposal of waste per environmental regulations.
  • Track and reduce energy/water consumption in dishwashing and cleaning processes.

7. Compliance & Reporting

  • Prepare reports for the Executive Chef on sanitation scores, equipment repairs, and budget performance.
  • Conduct weekly safety briefings and document incidents/near-misses.
  • Ensure compliance with OSHA standards and hotel safety policies.

Qualifications & Experience

Education

  • Diploma or degree in Hospitality Management, Culinary Arts, or related field.
  • 5+ years of experience in stewarding/kitchen operations, with 2+ years in a supervisory role.
  • Certification in Food Safety (HACCP, ServSafe) and OSHA training.
