About The Role

As a Commis, you will play a pivotal role in ensuring seamless operations within the Food & Beverage Department, directly influencing guest satisfaction. This hands-on position involves food preparation, basic cooking, and maintaining kitchen standards under the guidance of a Senior Chef. You will rotate through various kitchen sections, contributing to ingredient preparation, precise portioning, and stock management while upholding rigorous hygiene and safety protocols. Your work will not only support operational efficiency but also drive cost control, minimize waste, and enhance overall kitchen performance. What You'll Do

Maintain Operational Excellence

  • Execute food preparation tasks with precision, adhering strictly to Senior Chef instructions to uphold quality and presentation standards.
  • Operate high-volume kitchen equipment, including grills, deep-fat fryers, and griddles, while ensuring safety and efficiency.
  • Verify food quality and quantity to meet service requirements and contribute to cost-effective operations.

Support Inventory and Stock Management

  • Monitor stock levels, place timely orders, and manage inventory rotation (FEFO) to minimize waste and spoilage.
  • Assist in receiving and storing deliveries while ensuring compliance with company procedures.

Ensure Hygiene and Safety Compliance

  • Maintain impeccable hygiene standards, including daily and weekly procedures like temperature checks, food labeling, and equipment sanitation.
  • Identify and address kitchen hazards, report defects, and adhere to HACCP and health/safety regulations.
  • Participate in opening and closing kitchen protocols to ensure smooth operations.

Foster Team Collaboration and Development

  • Assist in maintaining cleanliness across assigned kitchen sections and support additional hygiene tasks as required.
  • Develop versatility across kitchen stations (vegetable, meat, fish, pastry, etc.) to adapt to varying operational demands.
  • Engage in continuous training and workshops to enhance skills and contribute to personal and team growth.

Drive Food Safety and Cost Efficiency

  • Collaborate with the team to achieve food cost targets, reduce waste, and optimize resource utilization.
  • Demonstrate adaptability in fast-paced environments, managing multitasking and pressure while maintaining composure.
  • Contribute to menu planning and stock control initiatives to support operational excellence.

What We're Looking For

Essential

  • Basic Hospitality or Catering training, or a foundation degree in Culinary Arts Management.
  • Previous on-the-job experience or apprenticeship in food preparation and kitchen organization.
  • Proficiency in basic cooking skills, including knife skills, sauces, salads, hot dishes, pastry, and roasting.
  • Familiarity with kitchen equipment and ability to work efficiently under pressure.
  • Strong communication skills in English and the ability to collaborate with diverse teams.
  • Commitment to maintaining high standards of personal hygiene, cleanliness, and adherence to HACCP protocols.
  • Physical stamina and mental resilience to handle long hours, split shifts, and high-stress periods.

Desirable

  • Diploma in Hospitality & Catering or Professional Cookery, or a certificate in international cuisine.
  • At least two years of experience in a restaurant or hotel kitchen setting.
  • Versatility across all kitchen stations (vegetable, meat, fish, pastry, butchery).
  • Attention to detail and the ability to learn quickly and apply lessons in real-time.
  • Creative flair to transform food components into appealing dishes.
  • Basic Food Hygiene and HACCP certification.
  • Proactive approach to maintaining kitchen cleanliness and safety standards.
