The Demi Chef de Partie Cold Kitchen supports the Chef de Partie in preparing, producing, and presenting high-quality cold dishes such as salads, canaps, sandwiches, cold appetizers, dressings, and buffet items. The role involves maintaining excellent food standards, ensuring proper mise en place, following hygiene and safety procedures, and assisting in the smooth operation of the Garde Manger section. This position is ideal for a developing chef who wants to strengthen technical skills, creativity, and efficiency in a fast-paced kitchen environment.

  • Assist in preparing and producing all cold kitchen items including salads, cold starters, dressings, marinades, canaps, and sandwiches.
  • Follow recipes, portion sizes, and plating guidelines set by the Chef de Partie or Sous Chef.
  • Support in preparing garnishes and decorative elements for presentations and buffets.
  • Ensure the cold kitchen station is properly set up with all required ingredients and equipment.
  • Maintain freshness and proper storage of all mise en place.
  • Assist the Chef de Partie in daily operational needs, especially during peak service.
  • Adhere to HACCP standards and all food safety regulations.
  • Maintain cleanliness of the workstation, equipment, and storage areas.
  • Practice correct handling, labeling, and storage of food to avoid cross-contamination.
  • Consistently check the flavor, texture, and appearance of food items before service.
  • Report any issues with quality, freshness, or stock shortages to the Chef de Partie.
  • Help ensure all dishes meet the establishment's presentation and taste standards.
  • Work closely with the Chef de Partie and other team members to ensure smooth kitchen operations.
  • Support and guide Commis Chefs when necessary.
  • Communicate effectively during service to ensure timely production of dishes.
