About Wynn Al Marjan Island:
On schedule to open in the United Arab Emirates in early 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.
About The Position
Wynn Al Marjan Island is currently seeking a Director of Wine to join the resort's Food & Beverage team.
Responsibilities
The primary duties and responsibilities of this role are:
- Develop and implement the overall wine strategy for Wynn Al Marjan Island, ensuring alignment with the resort's brand identity and guest expectations.
- Curate and maintain wine lists across all outlets, with a focus on diversity, exclusivity, and seasonal relevance.
- Establish and monitor par levels for wine and equipment, ensuring seamless supply chain management and anticipating business needs.
- Lead the design and execution of wine-related policies, SOPs, training programs, and service standards across the division.
- Partner with the Executive Director, Beverage and senior leadership to set staffing levels, recruitment strategies, and succession planning for wine professionals.
- Build and maintain strong relationships with international wine producers, distributors, and brand partners to secure exclusive allocations and partnerships.
- Ensure compliance with all health, sanitation, and liquor regulations, maintaining the highest standards of safety and cleanliness.
- Oversee wine inventory management, cost control, and procurement processes to maximize profitability while maintaining quality.
- Direct wine service for special events, banquets, and VIP experiences, collaborating closely with the events team to deliver bespoke offerings.
- Monitor industry trends, innovations, and guest preferences, integrating best practices into Wynn's wine operations.
- Conduct regular P&L analyses, ensuring the financial health of the wine program and achieving annual budgetary goals.
- Lead training and mentorship programs for sommeliers and wine staff, fostering professional growth and elevating service standards.
- Represent Wynn Al Marjan Island at wine industry events, tastings, and conferences, positioning the resort as a leader in luxury wine experiences.
- Any other tasks / duties as assigned by senior leadership.
About You
The ideal candidate for this position will have the following experience and qualifications:
- Minimum 810 years experience in wine program leadership, preferably within luxury hospitality or fine dining environments.
- Advanced wine certifications (e.g., Master Sommelier, WSET Diploma, or equivalent) strongly preferred.
- Proven ability to design innovative wine programs that enhance guest experience and drive revenue.
- Strong global network of wine producers, distributors, and industry professionals.
- Demonstrated success in managing large-scale wine operations, budgets, and inventory systems.
- Exceptional leadership skills with a track record of building and inspiring high-performing teams.
- Excellent communication, negotiation, and presentation abilities.
- Highly detail-oriented, results-driven, and passionate about delivering world-class wine experiences.
- Deep understanding of international wine trends, market dynamics, and guest preferences.
