About the Role

A Food Safety Officer is responsible for ensuring compliance with the Food Safety Management System across all stages, from food receiving to service. The role includes monitoring CCPs and CPs, advising food handlers on proper practices, tracking and reporting food safety complaints, and liaising with external auditors.

Responsibilities

  • Conduct regular food safety and sanitation inspections across all food handling areas, including kitchens, bars, pantries, staff areas, and guest amenities.
  • Monitor staff hygiene practices and report any non-compliance to relevant department heads.
  • Ensure compliance with Dubai Food Code, internal SOPs, and Food Safety Management System (FSMS) requirements.
  • Verify food safety controls throughout all stages of food handling, from purchasing and receiving to preparation, cooking, storage, and service.
  • Review kitchen logs, records, and food safety documentation for accuracy and compliance.
  • Oversee food safety data, including guest and supplier complaints, microbiological testing, pest control, water tank, grease trap, and exhaust cleaning reports.
  • Verify calibration of food safety equipment and conduct internal HACCP audits and mock traceability exercises.
  • Conduct and support supplier audits and mandatory food safety trainings (Basic Food Safety, PIC, on-the-job coaching).
  • Support DM Checked platform compliance, including system updates and account requirements.
  • Maintain corrective actions, track non-conformities, and support continuous improvement of the FSMS.
  • Report food safety incidents, audit findings, and trends to the Sustainability & Safety Director and management.
  • Participate in HACCP, departmental, weekly, and monthly meetings and assist with food safety reporting.

Qualifications

  • Bachelor's degree in food science/ microbiology, Technical/Vocational Science Diploma (or equivalent practical experience in Food Safety).
  • Proven experience as a Food Safety Officer, ideally with at least 1-3 years of experience specifically within a restaurant or hotel setting.

Required Skills

  • Relevant Food Safety certifications (e.g., Food Safety Management Level 4, HACCP Level 3, Dubai Municipalityapproved Basic Food Safety and Person in Charge training, or equivalent).
  • Basic understanding of food safety regulations and standards, including the Dubai Food Code and Codex Alimentarius.
  • Strong communication and interpersonal skills, with the ability to clearly convey food safety procedures and engage employees at all levels.
  • Good analytical and problem-solving skills, with the ability to support hazard identification, hazard analysis, monitoring processes, and corrective actions.
  • Proficiency in standard office software (MS Office) and basic food safety systems and tools, including DM Checked.
