Job description:
Financial & System Reconciliation: Conduct meticulous audits of the restaurant's
physical sales floor plans and seating arrangements. Ensure 100% accuracy by reconciling physical table data with the figures recorded on the Point of Sale (POS) system to eliminate discrepancies.
Inventory Control & Variance Analysis: Collaborate closely with the Cost Controller to review daily inventory counts. Perform detailec variance analysis to identify, investigate, and report any shortages (deficits) or surpluses in
stock levels.
Expert Knowledge of Stock Management: Maintain comprehensive mastery of daily and monthly inventory procedures, with a specialized focus on alcoholic beverages and cocktails. This includes understanding recipes, portion control
and pour-cost management.
Beverage & Bouchon Record Auditing: Monitor and audit the Bouchon (Empty Bottle) logs. Verify that the physical count of empty/full bottles matches the records across the bar
restaurant, and storage areas to prevent
unauthorized consumption or leakage.
Reporting & Strategic Recommendations: Generate and present daily audit reports to
Senior Management, Proactively identify operational weaknesses and provide strategic recommendations to mitigate theft/pilferage anc
implement revenue-boosting initiatives.
Staff Training & System Optimization:
Lead training sessions for the team on the POS
system. Focus on enhancing operationa efficiency, minimizing input errors, and ensuring the team can maintain accuracy and speed while working under high-pressure environments.
Job requirements:
Bachelor's degree in accounting, finance, or tourism and hotels.
5-10 years of experience in the field of fine dining restaurants and Nightlife as a Night Audit Supervisor or Income Auditor is a Must.
Previous experience with systems such as COMSYS or a related system is a Must.
Strong decision-making under pressure.
High level of integrity and discretion.
