Job Description

Key Responsibilities

Production & Standardization

  • Execute bulk pastry and bakery production according to approved recipes, SOPs, yield, and portion control.
  • Ensure consistency in taste, texture, weight, packaging, and shelf life across all batches.
  • Follow daily and weekly production plans aligned with outlet demand.
  • Monitor critical control points during mixing, baking, cooling, freezing, and packing.

Section & Workflow Management

  • Take full responsibility for assigned production area (bakery, cakes, desserts, frozen items, doughs, fillings, etc.).
  • Organize mise en place and production sequencing to meet dispatch timelines.
  • Coordinate with packing, dispatch, and logistics teams.
  • Ordering, Inventory & Cost Awareness
  • Assist in raw-material ordering based on production forecasts.
  • Monitor stock levels, expiry dates, FIFO, and batch traceability.
  • Control waste, rework, and overproduction.
  • Follow approved recipes strictly to support food-cost targets.

Staff Supervision & Training

  • Supervise Commis and production staff during shifts.
  • Train team members on SOPs, equipment usage, hygiene, and safety.
  • Ensure productivity targets are met within allocated labor hours.

Food Safety, Hygiene & Compliance

  • Ensure compliance with HACCP, food safety standards, and local authority regulations.
  • Maintain proper documentation: temperature logs, cleaning schedules, batch records, and traceability.
  • Ensure correct labeling (production date, expiry, batch code).
  • Innovation & Continuous Improvement
  • Support trials, new product development, and process improvements.
  • Assist in scaling recipes from kitchen trials to mass production.
  • Propose efficiency improvements in production flow, yield, and shelf life.

Qualifications and Skills:

  • Culinary or Pastry Diploma preferred.
  • 35 years pastry experience, with exposure to commissary or bulk production preferred.
  • Experience with central kitchen equipment and production planning is an advantage.
  • Strong understanding of large-scale production and standardization.
  • Good time management and planning skills.
  • Cost awareness and waste control mindset.
  • Ability to work under pressure in a high-volume environment.
